1 lb. fresh green beans (grandma always used fresh grown pintos for this)
5 or 6 small red potatoes
1/2 cup shortning or bacon grease
1/4 lb. salt pork
salt and pepper to taste
Snap and wash the beans and let water drain off well. Melt shortening or grease in large stock pot. Add beans and simmer on low heat stirring often to "wilt" the beans. Keep a lid on the pot between stirs and no water will need to be added. Beans will become soft and darken in color. Score salt pork and add to pot once beans have wilted. Turn the heat up to about medium and next add the potatoes, peel if so desired but not necessary. Cook for about 30 more minutes or until potatoes are fork tender. Add salt and pepper if needed. Very little water will need to be added if you have a good lid on your pot.
